Think of these as the lazy cook’s fruit crepes, and I mean that as the highest compliment.

Flour tortillas get loaded up with sliced strawberries and bananas, drizzled with melted cinnamon-brown sugar butter, and baked until everything goes warm and bubbly.

Then you hit them with a dollop of vanilla whipped cream folded with sour cream for just enough tang to keep things interesting.

Ready in 30 minutes, start to finish.

Pro Tips

  • Use ripe but firm strawberries so they hold their shape in the oven instead of turning to mush.
  • Don’t skip the sour cream in the whipped topping. That little bit of tang balances all the sweetness and keeps each bite from being one-note.

Directions

Place tortillas on large baking sheet.

Top with bananas and strawberries.

Combine brown sugar, cinnamon and butter.

Pour the sugar mixture evenly on top of the bananas and strawberries.

Bake at 350℉ (180℃) F for 10 minutes.

Meanwhile, beat cream with granulated sugar and vanilla until stiff peaks form.

Fold in sour cream. Chill.

Serve tortillas warm, cutting each into quarters.

Arrange 2 quarters on each dessert plate and top with sauce.
