These sweet little muffins get a burst of citrus from fresh orange zest stirred right into the batter, then each one is topped with two mandarin orange sections arranged to look like butterfly wings.

They’re the kind of recipe that makes a regular Tuesday morning feel special.

The batter comes together in minutes with self-rising flour doing most of the heavy lifting. Just stir until the flour is barely moistened and stop. Overmixing is the enemy of a tender muffin.

Kitchen Tips

  • Drain those mandarin sections well and pat them dry. Excess moisture will make the tops soggy.
  • Stir the batter just until the flour disappears. Lumpy batter makes the fluffiest muffins.
  • Place the orange sections on top before baking so they sink in slightly and caramelize at the edges.

Directions

Combine flour and sugar in a large mixing bowl.

Blend together egg, milk, shortening, and orange rind.

Add liquid all at once to flour mixture, stirring only until flour is moistened.

Fill greased muffin pans ⅔ full.

Place 2 orange sections on each muffin in opposite directions to form a butterfly.

Bake at 425℉ (220℃) for 20 to 25 minutes or until golden brown.
