1½ hrsThese pretty parfaits deliver all the elegance of traditional trifle in individual portions.
Delicate ladyfingers soak up the juices from sweet cherries and blueberries, while tangy vanilla yogurt adds creamy contrast without the heaviness of custard.
Toasted almonds on top provide the perfect crunchy finish.
Best made a few hours ahead so the flavors meld.
Pro Tips
- Make ahead: These actually improve after sitting in the fridge for a couple of hours or overnight
- Use clear glasses: Show off the beautiful berry layers in wine glasses or parfait cups
- Drain thawed berries: If using frozen, make sure they’re well-drained to avoid watery layers
- Toast almonds fresh: A few minutes in a dry pan brings out their nutty flavor
- Layer evenly: Divide ingredients equally among glasses for consistent portions
Variations
- Use strawberries and raspberries instead of cherries and blueberries
- Replace ladyfingers with cubed pound cake or angel food cake
- Add a drizzle of honey or berry liqueur to the fruit mixture
