Ground beef gets seasoned with chili powder and cumin, then stirred together with spinach, chunky salsa, and a generous handful of shredded cheddar that melts right into the filling.
Scoop it onto warm flour tortillas, fold them up, and dinner is done before anyone has time to complain about being hungry.
The spinach sneaks in some green without anybody noticing, making these a solid option for feeding picky eaters who claim they do not like vegetables.
Kitchen Tips
- Squeeze all the water out of the thawed spinach before adding it. Wrap it in a clean towel and wring it dry. Soggy spinach makes soggy burritos.
- Warm your tortillas before filling them. A dry skillet for 20 seconds per side keeps them pliable and prevents cracking when you fold.
- For a crispier burrito, place the folded burritos seam-side down in a lightly oiled skillet and toast for a minute on each side.

Directions
In large nonstick skillet, brown ground beef over medium heat 10 to 12 minutes or until no longer pink, stirring occasionally.
Pour off drippings.
Season beef with chili powder, cumin, salt and pepper.
Stir in spinach and salsa, heat through.
Remove from heat stir in cheese.
Spoon ½ cup beef mixture in center of each tortilla.
Fold bottom edge up over filling; fold sides to center, overlapping edges.
Makes 8 burritos.
