Bob’s method is a two-day affair, and that patience pays off. The ribs get boiled first until the meat is tender enough to pull, then they cool overnight in the fridge so the rub can penetrate the cold meat and the fat firms up for a cleaner finish under the broiler.

Three rounds of broiling with barbecue sauce brushed between each is what builds that sticky, lacquered crust. Each layer caramelizes under the heat, creating a sweet-smoky glaze with charred edges that crack when you bite through them.

Cutting the ribs apart before broiling exposes more surface area to the heat. More edges means more bark, more sauce, and more of what makes ribs worth eating.

Kitchen Tips

  • Boil the ribs at a gentle simmer, not a rolling boil. Aggressive boiling makes the meat stringy instead of tender.
  • Cool the boiled ribs overnight in the fridge uncovered. The surface dries out, which helps the rub stick and the sauce caramelize better.
  • Watch the broiler carefully during each 10-minute round. Barbecue sauce has sugar that burns fast, so keep the ribs on a lower rack if yours runs hot.
  • Let the ribs rest 5 minutes after the final broil so the sauce sets and doesn’t slide off when you plate them.

Variations

  • Skip the boil and smoke the rubbed ribs low and slow for 4-5 hours if you have a smoker. Finish with the broiler-and-sauce technique for the best of both worlds.
  • Use a vinegar-based Carolina sauce instead of a sweet BBQ sauce for a tangier, thinner glaze.
  • Add a tablespoon of brown sugar and smoked paprika to the rub for a deeper, sweeter bark.

Directions

Boil ribs 1 to 2 hours in water.

Cool overnight. Rub with seasoning mix.

Cut ribs apart. Broil 10 minutes at 350℉ (180℃). Remove, brush with BBQ sauce, broil another 10 minutes, remove brush with BBQ sauce, broil another 10 minutes.

Serve.
