Bayerische Erdbeercreme is a classic German strawberry Bavarian cream with fresh berries, whipped cream, and gelatin set in a mold. Light, elegant, and only six ingredients.

Bayerische Erdbeercreme is Germany’s answer to the question: what do you do with a quart of peak-season strawberries? You fold them into whipped cream with a little gelatin and let the fridge do the rest.

This is a traditional German Bavarian cream, and the technique is simple but precise. Slice the berries, toss them with sugar, and let them macerate until the sugar dissolves and the berries release their juices. That berry-sugar syrup becomes part of the flavor base.

The gelatin needs to bloom in cold water for 5 minutes before you heat it. Blooming hydrates the gelatin granules evenly so they dissolve completely when warmed. Skip this step and you’ll get rubbery lumps in an otherwise silky dessert.

Let the gelatin mixture cool to room temperature before adding it to the berries. Hot gelatin poured into cold cream will set in stringy clumps instead of distributing evenly. Once the gelatin and lemon juice join the fruit, fold in the whipped cream gently. You want to keep all that air you beat into the cream so the final texture stays mousse-like.

Pro Tips

  • Use ripe, fragrant strawberries. This dessert has nowhere to hide bland fruit.
  • Fold the whipped cream in by hand with a rubber spatula. A mixer will deflate it.
  • Oil the mold lightly before filling for easier unmolding. Or dip the outside of the mold briefly in warm water to release.
  • Chill for at least 4 hours, ideally overnight, for a clean unmold.

Variations

  • Raspberry version: Swap strawberries for raspberries and strain out the seeds after macerating for a smoother cream.
  • Schichtdessert (layered): Alternate the Bavarian cream with layers of sponge cake in individual glasses for a more elaborate presentation.

Directions

Slice strawberries and mix with the sugar.

Let stand until sugar dissolves.

Sprinkle gelatin over cold water. Set stand 5 minutes, then heat gently until gelatin dissolves completely.

Add gelatin and lemon juice to sliced berries.

Fold in whipped cream. Pour into a 1-quart mold or serving dish.

Chill until set. Carefully unmold and serve.
