The texture stays cloud-like without the food-safety worry, and the dark rum still cuts the sweetness like it should. Espresso is the soul of this dessert, dunk the ladyfingers cut-side down for a quick second so they drink up the coffee without falling apart into mush. Layer the soaked fingers and cheese mixture twice, dust the top with cocoa powder just before serving, and let the fridge do the heavy work for at least three hours. A long chill is what marries the coffee, rum, and cream into one cohesive bite.
Chef Tips
- Brew the espresso strong and let it cool slightly before dipping, hot coffee turns the ladyfingers to porridge.
- A one-second dip per side is plenty, the fingers will keep absorbing moisture in the fridge.
- Use the toothpicks-and-plastic-wrap trick from the directions to keep the wrap from sticking to the cocoa dusting.

Ingredients
Directions
Position knife blade in food processor; add first 6 ingredients.
Process until smooth; set aside.
Combine hot water and expresso granules. Split ladyfingers in half lengthwise.
Quickly dip 20 ladyfinger halves, cut side down, in expresso.
Place, dipped side down, into the bottom of a 9 inch square baking dish .
Dip 20 more halves cut side down into the expresso; arrange dipped side down on top of the first layer.
Spread 2 cups of the cheese mixture over the lady- fingers evenly; repeat procedure with remaining ladyfinger halves, expresso, and cheese mixture.
Place one toothpick in each corner and one in the center of the mixture) Cover with plastic wrap.
Refrigerate 3 to 8 hours. Remove toothpicks; sprinkle with cocoa.
